Ingredients

  • 4 boneless chicken breast diced

  • 4 cloves garlic (or more)

  • 4 tablespoons unsalted butter

  • 1 lemon (zest and juice)

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 tablespoon tumeric

  • 1 teaspoon chicken broth (optional)

  • 200ml Coconut Milk

  • 1 cup water

  • 4 medium Potatoes, dices

  • 1 large Carrot, chopped

  • Baby Peas (optional) 1 demon red chili (optional)

Directions

  • Prepare the Coconut Milk & Herbs:
    In a blender or food processor, combine the coconut milk, water, onion, garlic, lemon zest, lemon juice, dried thyme, dried oregano, tumeric, chicken stock and a pinch of salt and pepper. Blend until the mixture is smooth and well combined
  • Cook the Chicken:
    Heat a large skillet or frying pan over medium heat. Once hot, add the butter, chicken followed by potatoes to the skillet
  • Sear the Chicken:
    Sear the chicken for 5-6 minutes, or until they are golden brown and cooked through
  • Add Coconut Mixture
    Pour mixture on the chicken during the last few minutes of cooking, allowing the Coconut mixtue to infuse into the chicken and the carrots
  • Serve with your favourite Rice
