4 boneless chicken breast diced
4 cloves garlic (or more)
4 tablespoons unsalted butter
1 lemon (zest and juice)
1 teaspoon dried thyme
1 teaspoon dried oregano
1 tablespoon tumeric
1 teaspoon chicken broth (optional)
200ml Coconut Milk
1 cup water
4 medium Potatoes, dices
1 large Carrot, chopped
Baby Peas (optional) 1 demon red chili (optional)
Directions
- Prepare the Coconut Milk & Herbs:
In a blender or food processor, combine the coconut milk, water, onion, garlic, lemon zest, lemon juice, dried thyme, dried oregano, tumeric, chicken stock and a pinch of salt and pepper. Blend until the mixture is smooth and well combined - Cook the Chicken:
Heat a large skillet or frying pan over medium heat. Once hot, add the butter, chicken followed by potatoes to the skillet - Sear the Chicken:
Sear the chicken for 5-6 minutes, or until they are golden brown and cooked through - Add Coconut Mixture
Pour mixture on the chicken during the last few minutes of cooking, allowing the Coconut mixtue to infuse into the chicken and the carrots - Serve with your favourite Rice
